  • 2 medium sweet potatoes, peeled and diced (about 500g)
  • 1 can (400ml) full-fat coconut milk
  • 1 cup vegetable broth (240ml)
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 2 cups fresh spinach or kale (about 60g)
  • Salt to taste
  • Lime juice for serving

Instructions

  1. Heat 1 tbsp oil in a large pot over medium heat. Add chopped onion, garlic, and ginger; sauté until the onion is translucent (about 5 minutes).
  2. Add diced sweet potatoes and curry powder; stir to coat. Sauté for another 2 minutes.
  3. Pour in coconut milk and vegetable broth; bring to a gentle simmer.
  4. After about 10 minutes of cooking, add chickpeas and cook until sweet potatoes are tender (about another 10 minutes).
  5. Stir in spinach or kale; cook until wilted (about 2 minutes).
  6. Season with salt to taste and serve with lime juice drizzled on top.
