  • 1/4 cup pine nuts (40g), toasted
  • 1/4 cup fresh mint leaves (10g), chopped
  • 1/4 cup fresh basil leaves (10g), chopped
  • 2 tablespoons extra virgin olive oil (30ml)
  • Salt and pepper to taste

Instructions

  1. Wash and slice the zucchinis into half-moons, about half an inch thick.
  2. In a dry skillet over medium heat, toast the pine nuts for 3-5 minutes until golden brown. Set aside.
  3. In the same skillet, heat olive oil over medium-high heat and sauté zucchini slices for about 5 minutes until tender yet slightly crunchy; season with salt and pepper.
  4. Stir in the chopped mint, basil, and toasted pine nuts; cook for an additional minute until the herbs are fragrant.
