  • 1 lb breakfast sausage (pork or turkey)
  • 1 lb baby potatoes, quartered
  • 1 cup bell peppers, chopped (mix of colors)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian herbs

Instructions

  1. Prepare your ingredients by washing and quartering the baby potatoes, chopping the bell peppers and onion, and mincing the garlic.
  2. In a large skillet over medium heat, add olive oil and cook the sausage until browned (about 5-7 minutes). Remove from skillet.
  3. Using the same skillet, sauté onions and bell peppers for about 4-5 minutes. Add minced garlic in the last minute.
  4. Stir in quartered potatoes along with salt, pepper, paprika, and Italian herbs. Cook undisturbed for about 10 minutes until crispy on one side.
  5. Return cooked sausage to the skillet and mix everything well. Heat through for another few minutes.
  6. Serve hot directly from the skillet or transfer to plates. Garnish with fresh parsley if desired.
