  • 1 lb Italian sausage (mild or spicy)
  • 2 cups baby potatoes, quartered
  • 1 cup mixed bell peppers (red, green, yellow), sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and chopping the potatoes into quarters, slicing the bell peppers, and dicing the onion.
  2. Heat olive oil in a large skillet over medium heat. Add sausage links and brown on all sides for about 8-10 minutes.
  3. Remove the sausage from the skillet. In the same skillet with drippings, sauté onions and garlic until fragrant (about 2 minutes), then add bell peppers and potatoes.
  4. Season with salt and pepper; cook for about 5 minutes until veggies soften.
  5. Slice the cooked sausages into bite-sized pieces and return them to the skillet. Mix well and simmer together for another 5 minutes.
  6. Serve hot with crusty bread or salad.
