Roasted Pear and Gorgonzola Salad with Walnut Vinaigrette is a delightful blend of flavors that elevates any meal.   • 2 ripe pears (Bartlett or Bosc)
  • 4 oz Gorgonzola cheese, crumbled
  • 1 cup walnuts, toasted
  • 4 cups mixed greens (arugula and spinach)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Halve the pears, core them, and place cut-side up on the baking sheet. Drizzle with olive oil and sprinkle with salt.
  3. Roast for 20-25 minutes until tender and caramelized.
  4. While pears roast, toast walnuts in a dry skillet over medium heat for about 5 minutes until fragrant.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to make the dressing.
  6. In a large bowl, combine mixed greens with roasted pears (let cool slightly), crumbled Gorgonzola, and toasted walnuts. Drizzle with dressing and toss gently.
