  • 2 medium carnival squashes
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 small red onion, finely diced
  • 2 garlic cloves, minced
  • 1 cup fresh spinach, chopped
  • 1 tsp cumin powder
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the carnival squashes lengthwise, scoop out seeds, drizzle with olive oil, and season with salt and pepper. Place cut-side down on the baking sheet.
  3. Roast for 25–30 minutes until fork-tender.
  4. While roasting, heat 1 tbsp olive oil in a pan over medium heat. Sauté red onion until soft (about 5 minutes). Add garlic, chickpeas, cumin, salt, pepper, and spinach; cook until warmed through.
  5. Flip the roasted squashes cut-side up and generously fill them with the chickpea mixture. Return to the oven for an additional 10 minutes.
  6. Serve warm, drizzled with remaining olive oil or balsamic reduction.
