Ingredients

  • 2 cups butternut squash (cubed)
  • 4 cups kale (torn into pieces)
  • 3 tbsp olive oil (divided)
  • 1/2 tsp salt (to taste)
  • 1/4 tsp black pepper (to taste)
  • 1/2 cup feta cheese (crumbled)
  • 1/4 cup pumpkin seeds (raw or lightly roasted)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed butternut squash with 2 tablespoons of olive oil, salt, and pepper. Spread evenly on a baking sheet.
  3. Roast the squash for 25-30 minutes until tender and caramelized.
  4. While roasting, wash and dry the kale. Drizzle with remaining olive oil and massage gently until softened.
  5. Once the squash is done, let it cool slightly before combining it with the kale in a large bowl.
  6. Top with crumbled feta cheese and pumpkin seeds before serving.
