  • 2 medium beets (about 300g), roasted
  • 1/2 cup tahini
  • 2 garlic cloves, minced
  • 3 tbsp lemon juice (freshly squeezed)
  • 2 tbsp olive oil
  • 1/2 tsp salt (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and roast on a baking sheet for 45-60 minutes until tender. Let cool, then peel.
  2. In a food processor, combine the roasted beets, tahini, minced garlic, lemon juice, and salt. Blend until smooth.
  3. With the processor running on low speed, gradually drizzle in olive oil until you achieve your desired creaminess.
  4. Taste and adjust seasoning if needed.
  5. Transfer to a serving bowl. Drizzle with olive oil and garnish with herbs if desired. Serve with pita or veggies.
