  • 1 whole goose (1012 lbs)
  • 2 cups fresh cranberries
  • 1 large onion, chopped
  • 6 cloves garlic, minced
  • 1 handful fresh rosemary, chopped
  • 1 handful fresh thyme, chopped
  • Salt and pepper to taste
  • 1/4 cup honey
  • 1/4 cup balsamic vinegar

Instructions

  1. Preheat the oven to 325°F (165°C). Rinse and thoroughly dry the goose, trimming any excess fat.
  2. Generously season the inside and outside of the goose with salt and pepper. Stuff the cavity with chopped onion, minced garlic, and fresh herbs.
  3. In a saucepan over medium heat, combine cranberries, honey, and balsamic vinegar. Simmer for about 5 minutes until cranberries pop. Set aside.
  4. Place the goose breast-side up on a roasting rack in a pan. Roast for approximately 2 hours or until an internal temperature of 165°F (75°C) is reached, basting occasionally with pan juices.
  5. In the final half hour of roasting, brush the cranberry glaze over the goose for a beautiful caramelized finish.
  6. Let it rest for 20 minutes before carving and serving with the cranberry sauce.
