  • 1/3 cup granulated sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour and a pinch of salt.
  3. In another bowl, cream softened butter and sugar until light and fluffy. Mix in the egg yolk and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet, leaving space between each ball. Make an indentation in each cookie using your thumb.
  6. Fill each indentation with about half a teaspoon of raspberry jam.
  7. Bake for 12-15 minutes or until golden around the edges. Cool completely on wire racks before serving.
