  • 2 packs ramen noodles (discard seasoning packets)
  • 1 cup shredded red cabbage
  • 1 cup julienned carrots
  • 1/4 cup sliced green onions
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp unseasoned rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tsp honey (optional)
  • pepper to taste

Instructions

  1. Cook the ramen noodles according to package instructions (about 3-4 minutes). Drain and rinse under cold water.
  2. While noodles cool, prepare the vegetables: shred the cabbage, julienne the carrots, and slice the green onions.
  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (if using), and pepper.
  4. In a large bowl, combine cooled noodles and chopped veggies. Pour dressing over everything and toss well.
  5. Chill in the fridge for about 30 minutes before serving to enhance flavors.
  6. Serve chilled, garnished with extra green onions or sesame seeds if desired.
