  • 1 package (3 oz) ramen noodles
  • 4 cups green cabbage, shredded
  • 1 medium red bell pepper, thinly sliced
  • 1 cup carrots, grated or julienned
  • ¼ cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp sugar (optional)

Instructions

  1. Cook the ramen noodles according to package instructions (approximately 3 minutes). Drain and rinse under cold water.
  2. While noodles cool, shred the cabbage, slice the bell pepper, and grate the carrots.
  3. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, and sugar until smooth.
  4. In a large bowl, combine cooled ramen noodles with cabbage, bell pepper, and carrots. Pour dressing over and toss to coat evenly.
  5. Cover and chill in the fridge for at least 30 minutes before serving. Toss again before serving and garnish with sesame seeds or green onions if desired.
