  • 8 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter (melted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. In a bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of the prepared baking dish.
  3. Boil or steam purple sweet potatoes until tender, then mash into a smooth puree.
  4. In another bowl, beat together cream cheese and sugar until fluffy. Add mashed sweet potatoes, eggs one at a time, and vanilla extract; mix until well combined.
  5. Pour the cheesecake filling over the crust and smooth out the surface.
  6. Bake for 30-35 minutes until set around edges but slightly wobbly in center. Cool completely before slicing.
