  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar, divided
  • 1 cup pumpkin puree (canned)
  • 16 oz cream cheese, softened
  • 3 large eggs
  • 2 tsp pumpkin spice blend
  • 1 tsp vanilla extract
  • 1 cup whipped cream (for topping)

Instructions

  1. 1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. 2. In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press firmly into the bottom of the prepared pan to form the crust.
  3. 3. In a mixing bowl, beat softened cream cheese until smooth. Gradually add remaining sugar and pumpkin puree. Mix in eggs one at a time, then add pumpkin spice and vanilla until creamy.
