  • 1 ½ cups all-purpose flour
  • 1 cup canned pumpkin puree
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 2 large eggs
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract
  • For the Cream Cheese Swirl: 8 oz cream cheese, softened
  • ¼ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix eggs, pumpkin puree, vegetable oil, and vanilla until smooth.
  4. Combine wet and dry ingredients until just mixed.
  5. In a separate bowl, beat cream cheese with powdered sugar until smooth.
  6. Fill muffin cups halfway with pumpkin batter; add cream cheese mixture on top and cover with remaining batter. Swirl gently with a toothpick.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
