  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • 1 cup pumpkin puree
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • ⅓ cup vegetable oil
  • 4 oz cream cheese (softened)
  • 2 tbsp granulated sugar (for cream cheese mixture)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, and vegetable oil until smooth.
  4. Gradually add dry ingredients to the wet mixture and stir until just combined.
  5. In a small bowl, beat softened cream cheese with 2 tbsp of sugar until smooth.
  6. Spoon two-thirds of the muffin batter into each liner, add dollops of cream cheese mixture on top, then cover with remaining batter and swirl gently with a toothpick.
  7. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
