  • 1 and ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • 1 cup pumpkin puree (canned)
  • 16 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of a greased 9×13 inch baking pan.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add sugar and mix until fluffy.
  3. Blend in pumpkin puree, eggs, vanilla extract, and pumpkin pie spice until well combined.
  4. Pour the filling over the crust and bake for 30-35 minutes or until set but slightly jiggly in the center.
  5. Allow to cool at room temperature before refrigerating for at least two hours. Slice into squares and serve.
