  • 8 oz rotini pasta
  • 2 cups marinara sauce
  • 6 oz pepperoni slices
  • 1 lb Italian sausage, crumbled
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup diced bell peppers (mix of colors)
  • 1/2 cup chopped onion
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Cook the rotini pasta in salted boiling water until al dente, drain, and set aside.
  3. In a large skillet, sauté the onions and bell peppers over medium heat for about 5 minutes. Add the crumbled Italian sausage and cook until browned.
  4. In a mixing bowl, combine cooked pasta, marinara sauce, sautéed mixture, pepperoni, garlic powder, and Italian seasoning. Mix until well coated.
  5. Layer half of the mixture in the baking dish, sprinkle with half of the mozzarella cheese, then add the remaining pasta mixture on top. Finish with remaining mozzarella and Parmesan cheese.
  6. Cover with foil and bake for approximately 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden. Allow to cool slightly before serving.
