  • 1 tsp vanilla extract
  • 3 tbsp red, white, and blue sprinkles (plus extra for rolling)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, baking soda, and salt; set aside.
  2. In another bowl, beat softened butter, granulated sugar, brown sugar, egg, and vanilla until creamy.
  3. Gradually combine dry ingredients with wet mixture until just combined. Fold in sprinkles.
  4. Scoop tablespoon-sized portions onto ungreased baking sheets and flatten slightly.
  5. Bake for 10-12 minutes until edges are golden; let cool completely on wire racks.
  6. Once cooled, sandwich a scoop of ice cream between two cookies and roll edges in extra sprinkles.
  7. Wrap each sandwich individually in plastic wrap; freeze for at least an hour before serving.
