  • 4 cloves garlic, minced
  • 1 cup bell peppers, chopped
  • 1 cup spinach or zucchini, chopped
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese

Instructions

  1. In a large pot over medium heat, warm olive oil. Add minced garlic and sauté for about 1 minute until fragrant.
  2. Add chopped vegetables and cook for about 5 minutes until softened.
  3. Pour in the broth and bring to a gentle boil while stirring.
