  • 1/4 cup Dijon mustard
  • 2 tbsp olive oil
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and spray a large baking sheet with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper on both sides.
  3. Chop root vegetables into even pieces; toss them in olive oil, salt, and pepper until evenly coated.
  4. In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, and chicken broth until smooth.
