  • 2 cups dried raisins (soaked)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar (light or dark)
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp lemon juice
  • 2 tbsp unsalted butter (melted)
  • 1 store-bought or homemade pie crust

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Soak raisins in boiling water for 10-15 minutes, then drain.
  3. In a bowl, mix soaked raisins, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and melted butter until combined.
  4. Roll out the pie crust and place it in a pie dish. Pour the filling into the crust and cover with another layer of crust or leave it open-faced. Cut slits in the top crust for steam to escape.
  5. Bake for 30-35 minutes until golden brown. Allow cooling for at least one hour before serving.
