  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder

  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, and vanilla until smooth.
  3. In another bowl, combine flour, baking powder, cinnamon, nutmeg, and salt. Gradually add to the wet mixture and stir until just combined.
  4. Pour batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  5. While cooling, prepare the frosting by beating cream cheese and butter until smooth. Gradually mix in powdered sugar and vanilla until fluffy.
  6. Once cooled completely, spread frosting over the pumpkin bars. Slice and serve at room temperature or slightly chilled.
