  • 8 oz wide egg noodles
  • 1 lb ground beef (or chicken/turkey)
  • 1 cup bell peppers, chopped
  • 1 cup onions, chopped
  • 1 cup shredded mozzarella cheese
  • 3 tbsp low-sodium soy sauce
  • 2 tsp sesame oil

Instructions

  1. Boil water in a large pot, add egg noodles, and cook until al dente (about 8-10 minutes). Drain and set aside.
  2. In a skillet over medium heat, brown the ground meat until fully cooked; break it apart while cooking.
  3. Add chopped bell peppers and onions to the skillet; sauté until softened (about 5 minutes).
  4. Stir in soy sauce and sesame oil; let the mixture simmer for another minute.
  5. In a greased baking dish, layer half of the noodles, then the meat mixture and cheese, followed by the remaining noodles.
  6. Preheat oven to 350°F (175°C) and bake for 20-25 minutes until bubbly and golden.
