  • 2 medium leeks (sliced)
  • 8 oz mixed mushrooms (button and cremini, chopped)
  • 1 cup heavy cream
  • 3 large eggs
  • 1 tbsp fresh thyme (chopped)
  • 3 tbsp butter (divided)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roll out the thawed puff pastry on a floured surface, transfer it to a tart pan, and trim excess pastry.
  3. In a skillet over medium heat, melt 2 tbsp of butter; sauté leeks until soft (about 5 minutes).
  4. Add remaining butter and mushrooms; cook until browned (about 8 minutes).
  5. In a bowl, whisk together cream, eggs, thyme, salt, and pepper. Stir in sautéed leeks and mushrooms.
  6. Pour the filling into the pastry crust; bake for 30-35 minutes until golden brown.
