  • 9 lasagna noodles (regular or no-boil)
  • 2 cups fresh baby spinach
  • 1 cup mushrooms (sliced)
  • 1 cup ricotta cheese
  • 1.5 cups shredded mozzarella cheese (divided)
  • 2 cups marinara sauce
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Italian herbs (optional)

Instructions

  1. Boil lasagna noodles according to package instructions until al dente; lay flat on parchment paper.
  2. In a skillet, heat olive oil over medium heat. Sauté mushrooms until golden brown (about 5-7 minutes). Add spinach until wilted.
  3. In a bowl, mix ricotta with sautéed vegetables, half of the mozzarella, salt, pepper, and herbs.
  4. Spread filling on each noodle and roll tightly; place seam-side down in a greased baking dish.
  5. Pour marinara sauce over the rolls and sprinkle remaining mozzarella on top.
  6. Preheat oven to 375°F (190°C). Cover with foil and bake for 25 minutes; uncover for the last 5 minutes until bubbly.
