Ingredients

Scale
  • 4 cups all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 ½ cups warm water (110°F)
  • 2 tbsp granulated sugar
  • 1 tbsp salt
  • ¼ cup unsalted butter (melted)
  • 8 oz fresh mozzarella cheese (cut into cubes)
  • ⅔ cup baking soda (for boiling)
  • Coarse sea salt (for topping)

Instructions

  1. Prepare the Dough: In a large bowl, combine warm water, sugar, and yeast. Let it sit until bubbly (about 5 minutes). In another bowl, mix flour and salt. Stir in melted butter and then add the flour mixture to form a cohesive dough.
  2. Knead the Dough: Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Form it into a ball and place in an oiled bowl covered with plastic wrap. Let it rise in a warm spot until doubled in size (about 1 hour).
  3. Shape Your Pretzels: Punch down the risen dough and divide into approximately ten equal pieces. Roll each piece into ropes, place mozzarella cubes at the center, fold over, and twist into pretzel shapes.
  4. Boil Before Baking: Bring water to boil in a large pot; add baking soda. Gently drop each pretzel into boiling water for about 30 seconds before removing with a slotted spoon.
  5. Bake Until Golden: Preheat oven to 425°F (220°C). Place boiled pretzels on parchment-lined baking sheets, brush with melted butter, sprinkle with coarse sea salt, and bake for 12-15 minutes until golden brown.
  6. Serve & Enjoy: Let cool slightly before serving warm with marinara sauce or mustard.
