  • 4 cod fillets (6 oz each)
  • 3 tablespoons white miso paste
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sesame oil (divided)
  • 4 cups winter greens (kale or Swiss chard)
  • 3 cloves garlic, minced
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the miso paste, soy sauce, mirin, and 1 teaspoon of sesame oil until smooth.
  3. Place the cod on the baking sheet and brush generously with the miso glaze.
  4. Bake for 12-15 minutes until the fish flakes easily with a fork.
  5. Meanwhile, heat the remaining sesame oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  6. Stir in winter greens and sauté for about 5 minutes until wilted but vibrant. Season lightly with salt.
  7. Serve the cod alongside sautéed greens, drizzling any leftover glaze over the top.
