  • 2 tbsp Dijon mustard

  • 1 egg yolk mixed with 1 tbsp water (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season beef cubes with salt and pepper; sear in a hot skillet for 2-3 minutes until browned but not fully cooked.
  3. In the same skillet, sauté mushrooms and shallots until golden brown, about 5-7 minutes; stir in thyme and cool.
  4. Roll out puff pastry on a floured surface; cut into squares.
  5. Spread Dijon mustard on pastry squares; place beef and mushroom mixture in the center.
  6. Fold corners over filling, pinch seams to seal, and brush with egg wash.
