  • 2 medium zucchinis
  • 1 cup ground turkey or beef
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced onion
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 cup plain Greek yogurt
  • 2 tbsp freshly squeezed lime juice

Instructions

  1. Preheat oven to 400°F (200°C) and lightly coat a baking dish with nonstick spray.
  2. Halve zucchinis lengthwise and scoop out flesh to create space for the filling.
  3. In a skillet, sauté onions and red bell pepper until soft, about 5 minutes. Add ground turkey or beef and cook until browned. Stir in cumin, chili powder, and reserved zucchini flesh.
  4. Generously stuff the zucchini halves with the filling and place in the baking dish.
  5. Bake for 20-25 minutes until tender.
  6. While baking, mix Greek yogurt with lime juice in a bowl. Drizzle over baked zucchini before serving.
