  • 2 tbsp butter
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 jalapeños, chopped
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Prepare the corn by husking fresh ears and cutting off the kernels. If using frozen corn, measure out 4 cups.
  2. In a large pot over medium heat, melt butter. Add diced onion and minced garlic; sauté until softened (3-5 minutes).
  3. Stir in chopped jalapeños and cook for another 2 minutes.
  4. Add corn kernels and chicken broth to the pot. Bring to a simmer and let bubble for 15 minutes.
  5. Using an immersion blender, purée half of the soup until smooth while keeping some chunks for texture.
  6. Stir in heavy cream and lime juice; season with salt and pepper as desired. Serve topped with chopped cilantro.
