  • 4 salmon fillets (6 ounces each)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh basil leaves, chopped

  • Juice of 1 lemon (about 2 tablespoons)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season salmon fillets with salt and pepper in the prepared baking dish.
  3. In a mixing bowl, combine cherry tomatoes, olives, garlic, basil, lemon juice, and olive oil. Mix well.
