  • 2 large sweet potatoes (about 800g), peeled and cubed
  • 1 pound (450g) Italian sausage (spicy or mild)
  • 1/4 cup (60ml) pure maple syrup
  • 2 tbsp (30ml) olive oil
  • 1 tbsp fresh rosemary, chopped
  • Salt and pepper to taste
  • 1/4 tsp cayenne pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. In a large bowl, combine sweet potatoes with olive oil, salt, pepper, and cayenne pepper. Toss until evenly coated.
  3. Slice the sausage into rounds or crumble it; add to the sweet potato mixture and toss again.
  4. In a small bowl, mix maple syrup with chopped rosemary. Drizzle half of this mixture over the sweet potato-sausage blend; stir to combine.
  5. Spread the mixture in the prepared baking dish and drizzle remaining maple glaze on top.
  6. Bake for 30-35 minutes until golden brown and cooked through. Serve warm.
