  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup pure maple syrup
  • 4 cloves fresh garlic, minced
  • 2 tsp Cajun seasoning (divided)
  • 8 oz fettuccine or penne pasta
  • 1 lb fresh Brussels sprouts, halved
  • 2 tbsp olive oil
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Cut the chicken into bite-sized pieces; season with salt, pepper, and half of the Cajun seasoning.
  3. In a bowl, mix maple syrup, minced garlic, and remaining Cajun seasoning; pour over chicken in the baking dish.
  4. Bake for 20-25 minutes until golden brown.
  5. Cook pasta according to package instructions; drain and set aside.
  6. In a saucepan over medium heat, melt butter, stir in heavy cream and Cajun seasoning; add Parmesan cheese until smooth.
  7. Serve baked chicken with pasta and sauce alongside crispy Brussels sprouts.
