  • 8 oz (225g) sirloin steak, diced
  • 2 tbsp extra virgin olive oil
  • 1/2 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean and dry them. Poke holes all over each potato with a fork.
  2. Rub each potato with olive oil and season generously with salt. Place directly on the oven rack or a baking sheet. Bake for 45-60 minutes until tender.
  3. While potatoes bake, heat remaining olive oil in a skillet over medium-high heat. Add diced sirloin steak seasoned with salt and pepper. Sear for about 5-7 minutes until browned.
  4. Once potatoes are done, slice them open lengthwise and fluff the insides with a fork. Top each potato with sour cream, shredded cheddar cheese, seared steak bites, and chopped green onions.
