  • 3 medium zucchini (1 lb), sliced into ¼-inch rounds
  • 1 cup ricotta cheese (whole milk)
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • ¼ cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a baking dish with olive oil.
  3. Slice zucchini into thin rounds.
  4. In a bowl, mix ricotta with chopped basil, salt, and pepper until combined.
  5. Layer zucchini slices in the baking dish, adding dollops of ricotta mixture and shredded mozzarella between layers. Finish with mozzarella on top.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until golden and bubbly.
