  • 1 lb bone-in lamb shoulder (or boneless)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 4 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the onion until translucent, then add garlic and cook until fragrant.
  2. Add the lamb shoulder to the pot and brown on all sides for about 5-7 minutes.
  3. Stir in cumin, paprika, and coriander to create an aromatic base.
  4. Pour in chicken broth, followed by chickpeas and tomato paste. Stir well and bring to a gentle simmer.
  5. Partially cover the pot and let it simmer on low for about 1 hour or until the lamb is tender enough to shred.
  6. Remove the lamb, shred into bite-sized pieces, return it to the pot along with lemon juice, and stir before serving.
