  • 1 lb ground beef (80% lean)
  • 1/2 cup panko breadcrumbs
  • 3 green onions, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup Korean BBQ sauce
  • 1 tsp sesame oil
  • 8 small flour or corn tortillas
  • 1 cup shredded cabbage (for topping)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground beef, panko breadcrumbs, green onions, garlic, ginger, salt, and pepper until just combined.
  3. Form the mixture into tablespoon-sized meatballs and place on the prepared baking sheet.
  4. Bake for about 20 minutes or until golden brown and cooked through.
  5. While meatballs bake, combine Korean BBQ sauce and sesame oil in a small bowl.
  6. Warm tortillas on a skillet or in the microwave. Assemble tacos with meatballs and top with shredded cabbage and sauce.
