  • 2 medium sweet potatoes (about 500g), peeled and diced
  • 1/4 cup unsalted butter (60g)
  • 1/3 cup brown sugar (70g)
  • 1 tsp cinnamon
  • 1 cup mini marshmallows (about 100g)

Instructions

  1. Peel and dice the sweet potatoes into one-inch chunks.
  2. Place the diced sweet potatoes in the Instant Pot with enough water to cover them. Seal the lid and cook on high pressure for 10 minutes. Quick-release the pressure when done.
  3. Drain excess water, then add butter, brown sugar, cinnamon, and a pinch of salt. Mash until smooth and creamy.
  4. Transfer to a baking dish or keep in the pot. Top with mini marshmallows.
  5. Broil in the oven for 3-5 minutes until marshmallows are golden brown.
  6. Serve immediately and enjoy!
