  • 34 lbs brisket (well-marbled)
  • 1 cup Cabernet Sauvignon (or other full-bodied red wine)
  • 1 cup low-sodium beef broth
  • 2 medium onions (sliced)
  • 4 cloves garlic (minced)
  • 1 tbsp fresh thyme (chopped)
  • 2 bay leaves

Instructions

  1. Season brisket generously with salt and pepper. Set Instant Pot to 'Sauté' mode, add oil, and sear brisket for about 3-4 minutes on each side. Remove and set aside.
  2. In the same pot, sauté onions for about 5 minutes until translucent. Add minced garlic in the last minute.
  3. Pour in red wine and deglaze the pot by scraping up any bits stuck to the bottom. Simmer for 2 minutes.
  4. Return brisket to the pot, pour in beef broth until halfway covered, and add thyme and bay leaves. Close lid and seal.
  5. Select 'Manual' on your Instant Pot and cook on high pressure for 60 minutes.
  6. After cooking, allow natural pressure release for 15 minutes before quickly releasing any remaining steam. Let brisket rest before slicing.
