  • 1 cup crushed pineapple (drained)
  • 2 ripe bananas (mashed)
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1/2 cup chopped pecans or walnuts (optional)
  • 8 oz cream cheese (softened)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round baking pans.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mash the bananas and mix with the crushed pineapple, vegetable oil, and eggs until combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just mixed. Fold in nuts if desired.
  5. Divide batter between prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Cool in pans for ten minutes before transferring to wire racks.
  6. Once cooled, frost with cream cheese frosting before serving.
