  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1/2 cup fresh pineapple juice
  • 2 tbsp rice vinegar
  • 1 tbsp fresh ginger, minced
  • 4 garlic cloves, minced

Instructions

  1. 1. Prepare the Marinade: In a bowl, whisk together soy sauce, brown sugar, pineapple juice, rice vinegar, ginger, and garlic until well combined.
  2. 2. Marinate the Chicken: Place chicken thighs in a zip-top bag or shallow dish and pour half of the marinade over them. Seal tightly and refrigerate for at least one hour or overnight for best flavor.
  3. 3. Preheat the Grill: Heat grill to medium-high (375°F or 190°C).
  4. 4. Grill the Chicken: Remove chicken from marinade (discarding leftover marinade). Grill for 6-7 minutes per side until cooked through (internal temperature of 165°F or 75°C).
  5. 5. Brush with Marinade: In the last few minutes of grilling, brush reserved marinade over chicken for extra flavor.
