  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 lb fresh Brussels sprouts, halved
  • 1/4 cup pure honey
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a bowl, season the chicken breasts with salt and pepper.
  3. In another bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, balsamic vinegar, salt, and pepper.
  4. Pour half of the sauce over the chicken and add the Brussels sprouts; toss to coat well.
  5. Arrange the chicken on one side of the baking sheet and Brussels sprouts on the other; drizzle remaining sauce over everything.
  6. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and Brussels sprouts are tender.
