  • 4 cups all-purpose flour
  • 1 packet (2 ¼ tsp) instant yeast
  • 1 ½ cups warm water (110°F/43°C)
  • 2 tbsp brown sugar
  • 1 tbsp coarse sea salt (plus more for topping)
  • ¼ cup baking soda

Instructions

  1. In a large bowl, mix warm water, brown sugar, and instant yeast. Let it sit until frothy (about 5 minutes). Gradually add flour and salt until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth.
  3. Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place until doubled in size (about 1 hour).
  4. Once risen, punch down the dough and divide it into eight pieces. Roll each piece into ropes and shape into pretzels.
  5. Boil water in a large pot, add baking soda carefully. Boil each pretzel for about 30 seconds per side before placing on parchment-lined baking sheets.
  6. Preheat the oven to 450°F (230°C). Brush boiled pretzels with water and sprinkle with coarse sea salt. Bake for about 12 minutes until golden brown.
