Ingredients

Scale
  • 4 medium Russet potatoes (about 1.5 lbs)
  • 3 tbsp extra virgin olive oil
  • 3 cloves fresh garlic, minced
  • 2 tsp dried oregano
  • 1 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and peel the Russet potatoes. Cut them into thick strips (about ½ inch wide).
  2. Soak the cut potatoes in cold water for 30 minutes to remove excess starch.
  3. Preheat your oven to 425°F (220°C). Drain and pat the soaked potatoes dry.
  4. In a large bowl, combine olive oil, minced garlic, oregano, salt, pepper, and lemon juice. Toss in the potatoes until well-coated.
  5. Spread the potatoes in a single layer on a parchment-lined baking sheet. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
  6. Once done, drizzle with additional lemon juice and sprinkle more oregano if desired.
  7. Serve hot with tzatziki sauce or your favorite dip.
