  • 2 cups low-sodium vegetable broth
  • 2 tbsp extra-virgin olive oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup carrots, finely diced
  • 1 cup bell peppers, finely diced
  • 1 cup fresh parsley, chopped
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped

Instructions

  1. Rinse quinoa under cold water in a fine-mesh strainer to remove bitterness.
  2. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent, about 5 minutes.
  3. Add carrots and bell peppers; cook for an additional 3 minutes until softened.
  4. Stir in rinsed quinoa and vegetable broth. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed.
  6. Fluff quinoa with a fork and mix in parsley, thyme, and rosemary. Serve warm.
