Hearty Beef Bourguignon is a classic French stew that envelops you in warmth with every bite.   • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 3 cups red wine (preferably Burgundy)
  • 4 medium carrots, sliced
  • 8 oz cremini mushrooms, sliced
  • 2 medium yellow onions, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Chop the beef, onions, carrots, and mushrooms. Pat the beef dry.
  2. Heat olive oil in a large Dutch oven over medium-high heat. Brown half of the beef pieces seasoned with salt and pepper on all sides, then remove from pot.
  3. Sauté onions, carrots, and mushrooms in the same pot until softened (about 5 minutes).
  4. Return the browned beef to the pot along with minced garlic; sprinkle flour over everything. Stir in red wine while scraping the bottom of the pot.
  5. Add beef broth, thyme, and bay leaves. Bring to a gentle boil; reduce heat to low. Cover and simmer for about 2 hours.
  6. Serve hot over mashed potatoes or crusty bread after removing bay leaves.
