  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh pineapple chunks (or canned in juice)
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon fresh ginger, grated
  • 3 garlic cloves, minced
  • 1/4 cup ketchup
  • 2 tablespoons lime juice

Instructions

  1. In a medium bowl, mix together soy sauce, brown sugar, garlic, ginger, ketchup, and lime juice until fully combined.
  2. Place chicken in a resealable bag or shallow dish; pour half the marinade over the chicken. Seal and refrigerate for at least one hour.
  3. Preheat grill to medium-high heat (375°F) or oven to 400°F.
  4. Remove chicken from marinade (discard remaining marinade) and cook on the grill for 6-7 minutes per side or bake for 25-30 minutes until cooked through.
  5. During the last few minutes of cooking, add pineapple chunks to the grill or baking dish to warm them up.
  6. Serve hot with caramelized pineapples on top.
