Ingredients

  • 2 firm white fish fillets (cod or haddock, approx. 200g each)
  • 2 large Russet potatoes
  • 2 tbsp olive oil
  • 1 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste
  • Tartar sauce for serving

Instructions

  1. Wash and peel the potatoes, cut them into thick wedges, and toss in 1 tbsp of olive oil with salt and pepper.
  2. Preheat your grill to medium heat (375°F/190°C).
  3. Season both sides of the fish fillets with the remaining olive oil, lemon juice, salt, and pepper.
  4. Grill potato wedges first for about 15-20 minutes until golden brown and crispy.
  5. Once potatoes are halfway done, add seasoned fish fillets to the grill and cook for 4-5 minutes per side until flaky.
  6. Serve immediately with tartar sauce on the side and extra lemon wedges.
