  • 1 lb ground beef (lean)
  • 1/2 cup panko breadcrumbs
  • 2 tbsp gochujang (Korean chili paste)
  • 3 cloves garlic (minced)
  • 1/4 cup green onions (chopped)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine ground beef, panko, minced garlic, green onions, and half of the gochujang. Mix gently until combined.
  3. Form the mixture into approximately one-inch meatballs and place them on the baking sheet.
  4. In a saucepan over medium heat, whisk remaining gochujang with soy sauce and honey until smooth. Simmer for two minutes.
  5. Brush half of the sauce over the meatballs before baking for about 20 minutes or until they reach an internal temperature of 160°F (71°C).
  6. Drizzle remaining sauce over baked meatballs before serving.
